The serving staff can make a big difference to attendees’ perceptions
at any event where food or drink is provided. At the most basic level,
they should always remain courteous and attentive. They should be groomed
and dressed appropriately for the style of the event. Whether the venue
or a caterer is providing the serving staff, they should be experienced
professionals who are familiar with the site and the food and drink
being served. Always spell out in the contract the number of staff who
will be on site, their hours, duties, break-times, when over-time begins,
dress code, gratuity scales, etc.
